Sugar is a major ingredient in a variety of foods, but overconsumption is linked to common chronic conditions such as diabetes. Allozymes aims to manufacture a healthy and natural sugar alternative from sustainable biomass such as rice husks. Allozymes uses its proprietary platform to identify and engineer specific enzymes to convert the biomass into sugar. This low-caloric sugar contains dietary fibres which prevent spikes in blood glucose levels (low Glycemic Index) thereby presenting as a healthy sugar alternative. It also aims to be a direct replacement for table sugar with its similar food processing properties such as sweetness and caramelisation.
